Project Description

Our goal is centered arround using advanced proteomics tools to characterize seed-storage proteins from on pea proteins. The project will examine the composition and structure of pea proteins using LC-MS/MS and other biophysical tools, and how they relate to quality attributes of pea protein used in food. This project seeks to improve our basic understanding of legume proteins and enhance their use to meet the growing demand for sustainable, plant-based foods. This project involves a collaboration with the National Research Council of Canada (NRC).
