Laura Vang Rasmussen

With the Banting postdoctoral fellowship I will research a relatively unexplored issue – that is, the relation between agricultural intensification and expansion and dietary quality. Across the planet, intensification and expansion of agriculture are rapidly increasing. Although the very point of agricultural intensification and expansion is to create more food to reduce hunger, paradoxically the two processes may lead to reduced food security.

Through the Centre for Sustainable Food Systems, I work on projects related to local and regional food systems, food literacy (specifically in the context of farm to school programs), food policy, and agricultural land use.  I also work on developing resources to help farmers, processors, and others interested in agriculture and food to access and use research results to support the sustainability and resilience of their operations.  I am jointly appointed at the University of the Fraser Valley.

My research seeks to understand how spatial patterns of human activities across landscapes impact biodiversity, ecosystem services, and human well-being, with an emphasis on agricultural and urban systems. To investigate these linkages, I use diverse techniques, including conceptual, modeling, empirical, remote sensing, and advanced spatial analysis approaches.
